Creamy Garlic Chicken

Ingredients

  • 600g chicken breast fillets, sliced
  • 2 tbsp olive oil
  • 8 cloves garlic, minced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper
  • Mashed potatoes, to serve
  • Green beans, to serve

Instructions

  1. Season chicken with salt and pepper. Heat oil in a large pan over medium-high heat.
  2. Cook chicken for 5-6 minutes until golden and cooked through. Remove and set aside.
  3. Add garlic to the same pan and cook for 1 minute until fragrant.
  4. Pour in chicken stock and bring to a simmer. Cook for 2 minutes.
  5. Add cream and parmesan. Stir until cheese is melted and sauce is smooth.
  6. Return chicken to the pan and simmer for 2-3 minutes until heated through.
  7. Stir through parsley and serve immediately with mashed potatoes and green beans.
