Creamy Sausage Pasta

Ingredients

  • 400g pasta (penne or rigatoni)
  • 6 Italian sausages, casings removed
  • 1 brown onion, diced
  • 3 cloves garlic, minced
  • 400ml can crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1 tsp dried basil
  • Salt and pepper
  • Fresh parsley, chopped

Instructions

  1. Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Meanwhile, heat a large pan over medium-high heat. Add sausage meat and cook, breaking it up, for 5-6 minutes until browned.
  3. Add onion and cook for 3-4 minutes until softened. Add garlic and cook for 1 minute.
  4. Add crushed tomatoes and basil. Simmer for 5 minutes.
  5. Stir in cream and parmesan. Season with salt and pepper.
  6. Add cooked pasta and toss to combine. Add pasta water if needed to loosen the sauce.
  7. Serve garnished with fresh parsley and extra parmesan.
