Ingredients
- 400g pasta (penne or rigatoni)
- 6 Italian sausages, casings removed
- 1 brown onion, diced
- 3 cloves garlic, minced
- 400ml can crushed tomatoes
- 1 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 1 tsp dried basil
- Salt and pepper
- Fresh parsley, chopped
Instructions
- Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then
drain.
- Meanwhile, heat a large pan over medium-high heat. Add sausage meat and cook, breaking it up,
for 5-6 minutes until browned.
- Add onion and cook for 3-4 minutes until softened. Add garlic and cook for 1 minute.
- Add crushed tomatoes and basil. Simmer for 5 minutes.
- Stir in cream and parmesan. Season with salt and pepper.
- Add cooked pasta and toss to combine. Add pasta water if needed to loosen the sauce.
- Serve garnished with fresh parsley and extra parmesan.
