Ingredients
- 2 tbsp laksa paste
- 400ml can coconut milk
- 4 cups chicken stock
- 500g frozen dumplings
- 200g rice noodles
- 2 cups bean sprouts
- 1 lime, juiced
- Fresh coriander
- Fresh mint
- 2 hard-boiled eggs, halved (optional)
Instructions
- Heat a large pot over medium heat. Add laksa paste and cook for 1 minute until fragrant.
- Pour in coconut milk and stock. Bring to a boil and simmer for 5 minutes.
- Add frozen dumplings and cook according to package instructions (usually 5-6 minutes).
- Meanwhile, cook rice noodles according to package instructions.
- Divide noodles among 4 bowls. Add dumplings and bean sprouts.
- Ladle hot laksa broth over the top. Add lime juice and top with fresh herbs and egg if using.
- Serve immediately.
