Quick Dumpling Laksa

Ingredients

  • 2 tbsp laksa paste
  • 400ml can coconut milk
  • 4 cups chicken stock
  • 500g frozen dumplings
  • 200g rice noodles
  • 2 cups bean sprouts
  • 1 lime, juiced
  • Fresh coriander
  • Fresh mint
  • 2 hard-boiled eggs, halved (optional)

Instructions

  1. Heat a large pot over medium heat. Add laksa paste and cook for 1 minute until fragrant.
  2. Pour in coconut milk and stock. Bring to a boil and simmer for 5 minutes.
  3. Add frozen dumplings and cook according to package instructions (usually 5-6 minutes).
  4. Meanwhile, cook rice noodles according to package instructions.
  5. Divide noodles among 4 bowls. Add dumplings and bean sprouts.
  6. Ladle hot laksa broth over the top. Add lime juice and top with fresh herbs and egg if using.
  7. Serve immediately.
