Garlic Butter Chicken Thighs

Ingredients

  • 8 chicken thigh fillets
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper
  • 4 tbsp butter
  • 6 cloves garlic, minced
  • 2 tbsp fresh thyme
  • 1 lemon, juiced
  • Mashed potatoes, to serve
  • Asparagus, to serve

Instructions

  1. Season chicken thighs with paprika, garlic powder, salt, and pepper.
  2. Heat a large skillet over medium-high heat. Cook chicken thighs skin-side down for 5-6 minutes until crispy.
  3. Flip and cook for another 5-6 minutes until cooked through. Remove and set aside.
  4. Reduce heat to medium. Add butter to the same pan. Once melted, add garlic and thyme and cook for 1 minute.
  5. Add lemon juice and stir. Return chicken to the pan and spoon the butter sauce over the chicken.
  6. Serve immediately with mashed potatoes and asparagus.
