Slow-cooker Beef Stew

Ingredients

  • 800g beef chuck, cut into 3cm cubes
  • 2 tbsp plain flour
  • 2 tbsp olive oil
  • 2 brown onions, diced
  • 4 cloves garlic, minced
  • 4 carrots, cut into chunks
  • 3 potatoes, cut into chunks
  • 2 cups beef stock
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 2 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper

Instructions

  1. Toss beef cubes with flour, salt, and pepper.
  2. Heat oil in a large pan over high heat. Brown beef in batches for 3-4 minutes per batch. Transfer to slow cooker.
  3. Add onions and garlic to the same pan and cook for 2 minutes. Transfer to slow cooker.
  4. Add carrots, potatoes, stock, wine (if using), tomato paste, thyme, and bay leaves to slow cooker.
  5. Stir everything together. Cover and cook on low for 6-8 hours or on high for 4-5 hours until beef is tender.
  6. Remove bay leaves before serving. Season with additional salt and pepper if needed.
  7. Serve hot with crusty bread or mashed potatoes.
